Animal Fats & How To Use Them
Beef Tallow (Dripping)
A quiet staple of British kitchens for generations, beef tallow is rich, golden and wonderfully dependable. It gives roast potatoes their crisp edges, adds depth to stews, and makes the simplest meals feel special.
We source our tallow from pasture-raised cattle, if possible, from regenerative farms where animals are part of the land and nothing is wasted. Using it is a small way of honouring the whole animal — and of cooking the way our grandparents did.
Warm, savoury and deeply satisfying, this is proper cooking fat, just as it should be.
Pork Lard
Lard has been loved by bakers and cooks for centuries. It makes pastry tender and flaky, gives roast vegetables a beautiful finish, and brings a gentle richness to everyday cooking.
We are proud to stock pork lard that is rendered from British pigs raised with care, making use of what would otherwise be thrown away. It’s a simple, honest ingredient that belongs in a warm kitchen, not a factory.
For anyone who enjoys cooking from scratch, lard is one of those quiet little secrets that makes everything better.
Duck Fat
Duck fat is a favourite of cooks for a reason. It turns potatoes crisp and golden, brings depth to vegetables, and adds a subtle savoury note that lifts even the simplest meal.
This is a by-product of British duck farming, gently rendered and ready for your kitchen. Using it means less waste, more flavour, and a small nod to traditional cooking.
A little spoonful goes a long way — especially on a cold evening.
Goose Fat
Goose fat is rich, silky and full of character. It’s famous for roast potatoes, but just as lovely for vegetables, roots and slow-cooked dishes.
Ours comes from British geese raised for food, where the fat would otherwise be overlooked. By using it, you’re helping to make sure nothing from the animal is wasted.
It’s a festive favourite, but far too good to save only for special occasions.
Ghee
Ghee is a gently clarified butter with a warm, nutty flavour and a wonderfully high cooking temperature. It’s perfect for frying, sautéing and slow cooking, bringing richness without burning.
Loved in kitchens around the world, ghee is a simple way to cook with care and intention. Just a spoonful adds depth and comfort to everyday food.
A small jar that earns its place by the stove.
